I thought they might be but they seem to vary in colour and wasn't sure if it's because they're a different species within the Pleurotus genus or because they simply vary . Which species would this be exactly? |

Can't be 100% certain without a shot of the gills/stem, but I'm pretty sure those are P. ostreatus. That species is very variable in colour.

It was hard to get a decent shot of underneath without getting on the wet ground as they were so low down plus all the dog walkers and tree surgeons that were present in the park at the time would have thought I was a bit strange! : )... I think to be honest the gills/stems were exactly like those on other pictures of oyster mushrooms which I googled.
